Personally, I'd love to do some sort of action/platformer game. Not just because I did it last year, but it seems effective, and it's more challenging/fun to make. Quiz games might teach you, but they're boring as heck. Simulators can be fun, but many people don't have the patience, or they get so wrapped up in the gameplay they forget the overall message (the classes reaction to 3rd World Farmer seems to support this theory of mine). An action-esque game provides a fun experience, and if you find a clever way to work learning the material into the mechanics, you've got gold.
